Yesterday I was out for an afternoon ride. The air temp was up around 100 degrees F. Very warm for our neck of the woods. Anyway, as I was riding, I glanced down at the engine temp gauge and noticed that it read 145. This is after riding for about 20 minutes. What? I looked down again a few seconds later and it read 185. I looked down again and it read 209. Every 3 to 4 seconds it was bouncing around randomly up and down. It finally landed at 95 degrees and stayed there for the rest of the ride. The VTEC was engaging normally so I know the temp was above 150. It didn't feel like the motor was overheating either.
The bike was parked in a semi-shady location during the hot part of the day, but it did sit in the sun for a little while. Any chance something got too hot in the sun??
Today the engine temp gauge does not work at all. All it shows are the two dashes that normally appear at start up. Also, the speedometer stopped working for a short time today as well. It simply read 0. I had stopped at a store, and when I came back out it was working fine again, but the temp gauge still read -- .
Have you had the harness recall done yet? Any other problems that would indicate a discharged battery? Some of your symptoms sound like the green wire/blue connector of death problem. If it were just the temp sensor I can't see it having an impact on the speedo.

Yes, the harness recall was done in January. I was just out riding tonight again, and lo and behold, both the speedo and temp gauge are working again. Go figure. I wonder if some water got in there -- I washed the bike pretty thoroughly about a week ago. Or maybe sitting in the hot sun? It's a mystery to me.
So yesterday morning I get up and hop on the bike. It's been in the garage all night. Everything works fine. Temp gauge/speedo functioning normally. I had the bike parked in the same spot all day in some sun. I get on the bike in the afternoon -- no temp gauge/speedo at first but after about 10 minutes they start to function again. This morning, after being in the garage all night, everything works fine. I'm seeing a pattern that when I leave the bike out in the sun, the gauges quit, at least temporarily. What gives? Weird. And when they "quit", they are still giving a display, it's just a zero display.
Is it just the engine temp that's jumping all around? If so, check your coolant level. If air is in the system funky things will happen on the coolant temp output.

I am having the same problem on my 04 (I also have had the harness recall performed). Did you ever figure out what the issue was and how to fix it?

I am too now having the temp gauge bounce. I was riding for about 3 hours and then all of a sudden the gauge went to 245 down to 200 up to 235 and so on. I knew something was weird because my fan never came on. I stopped and let it sit about 5 min and then it seem to read right. Another thing I found is if I use my scorpio alarm, evertime I engage it and it flashes the light in resets my clock and trips. I guess I need to remove the front and check the harness really well.
I think I might of found it. The green wire is no longer in the "blue" connector and it looks like all the grounds are off a different connector on the right side of the bike. This connector has 2 heavy red wires, 2 heavy green wires and 1 white/black wire. Well when I looked at it seamed that the connector was not pushed together all the way so I took it apart inspected the connectors and pushed together the correct way. I went over all the connectors in the new harness and made sure all were connected properly. Put the bike back together and went for a nice ride and temp was rock solid. I hope this took care of all my issues.

I am starting to wonder if I am actually looking at two separate issues.
The first being the temp sensor issue possibly caused by a faulty sensor or by a wiring problem. I honestly haven't looked at this issue too much because the bike is still running fine (VTEC engages and the fan comes on) so I just switched to air temp and went on my merry way. I will get under the right fairing and check out the connections in the next day or two.
My second issue is the speedo problem of the reading starting to bounce and then it reading zero while riding. My bike has 15,500 miles so I hope that it is just a worn speedo joint and an easy $8 fix. The wiring to the speedo looks fine and old joint looks a little worn - for $8 I figured I needed to give it a try.
Strange thing is both problems seem to crop up when the bike is warm - particularly if it has been sitting out in the sun (like while I am at work). I have no idea as to why that would be.
Anyone with any other ideas as to what may be the problem feel fee to comment. Thanks.

After 300 miles the problem never came back so I would say it was fixed. I wont be able to keep you up anymore since I sold the bike tonight. Hope you can find your issue.
