I have a 8 mile commute. I normally hit 150F (where vtec enables) by the time I travel about 2 miles... took much longer this morning and I only got up to about 165F by the time I got to work even sitting at stoplights. Wasn't cold either (50F).
Pretty much confirmed on my way to work this morning. Coolant was 143F when I got on the freeway.. after getting up to 80mph, the coolant was still at 143F 5 minutes later.

Mail ordered a new thermostat and O-ring.
Dig in. Been there, done that. Not a bad job, but take your time and don't try to cut corners. I found some very helpful step by step instructions on this forum, check out your search function and I'm sure they will pop up. Good luck.
Oh, and make sure you use silicate free antifreeze or you run the risk of water pump leaks.....
Been there. When mine stuck open, I just used it as an excuse to have the dealer do all my other service and install my alarm. No valve check though...
