At what temp should I start to get worried, today riding i noticed that my engine temp went up to 221 F, is was only about 75 degrees out while I was riding.
EDIT!!! I forgot to state that at the time I was riding at 25 MPH in first gear for about 1/2 a mile after running 40 miles at an ave of 50mph
When mine gets to about 222, the fan comes on and it creeps down a few degrees until I start rolling again. Wouldn't worry, but check your coolant level.

That sounds pretty normal, The highest reading I personnaly ever saw is 225, in my 55,000 mile and thats sitting in traffic in 110 degree temps , the fan works great on this model IMO.
For some reason though, many have serious cooling issues and feel the opposite, My bet they all have thermo issues
but If my bike started getting up above 230 , I know that is not normal
I've seen 235-240 just before I start to drop coolant out my overflow tube. Changed tstat and no use engine ice. Plus, found out my fan only likes to come on occasionally when it hits 220. So I wired in a manual switch. Now I usually turn fan on when it gets to 210 or so in stop and go. Never see it above 220 anymore.
btw-changing the tstat sucks. Must have plenty of patience.
