Like most owners here I know when my 04 VFR is acting just a little bit strange. Generally on my ride to work, if it's below 70 outside, my bike runs at around 167-168, and stays there. This morning I was at 167-185 constantly. The temperature never stayed the same for more than a few seconds. Stopping at a stoplight the temps would immediately climb to 185. When I got to work I parked and left the bike running. The temperatures starting rising right away. In about one minute it was up to 230 and the fan never kicked on. Any thoughts? I let it cool down and checked and the coolant level is fine.

That doesn't sound like a bad T-stat, but your fan should have kicked on around 220* to cool it back down.

Check the fan switch connectors.
